Signature Kale Salad

Signature Kale Salad

 

4 cups lacinato (black) kale, cut julienne
1 tablespoon of grated pecorino cheese
1 each minced medjool date
1 tablespoon shaved radishes
2 tablespoons chopped, toasted hazelnuts
2 ½  tablespoons lemon vinaigrette dressing
4 turns cracked black pepper

Combine kale, cheese, date, radishes, hazelnuts, and toss with lemon vinaigrette.Top with cracked black pepper.

 

Signature Spinach Salad

4 cups baby spinach
2 each halved cherry tomatoes
1 tablespoon sliced red onions
1 tablespoon pecans
2 teaspoons blue cheese
2 ½  tablespoons lemon vinaigrette dressing
1 pinch salt
4 turns cracked black pepper

Combine spinach, cherry tomatoes, red onions, pecans, blue cheese, salt and toss with lemon vinaigrette. Top with cracked black pepper.

 

Miso Ginger Kale Salad

4 cup lacinato (black) kale, cut julienne
¼ cup edamame
1 each dried papaya spear,
2 tablespoons chopped, toasted cashews
1 tablespoon toasted sesame seeds
3 tablespoons sesame ginger dressing
4 turns cracked black pepper

Combine kale, edamame, papaya, cashews, sesame seeds and sesame ginger dressing. Top with cracked black pepper.

 

Spinach Nicoise Salad

4 cups baby spinach
1 diced egg
1 tablespoon shredded asiago cheese
4 each olives
1 tablespoon sliced red onions
1 ¾ tablespoons lemon vinaigrette dressing
1 pinch salt
2 turns cracked black pepper
¼ cup quinoa salad

Combine spinach, egg, cheese, olives, red onions, salt and toss with lemon vinaigrette. Top with quinoa salad and cracked black pepper.
